南粉合菜

  漣源盛產紅薯粉絲,尤以甘溪鄉一帶享有盛名,產品行銷省內外。由于盛產粉絲,因此便有了漣源的南粉合菜。它以其色彩斑瀾、鮮香糯軟、“合”而不雜,深受廣大人們的喜愛,并且傳承數十年,興盛不衰。在上世紀那段“瓜代飯”的艱難歲月里,南粉合菜“亦菜亦飯”的功能,給人們留下了難忘的記憶!i源南粉合菜的主要原料是:切成5至6寸長的紅薯粉絲、干黃花、干筍尖、時蔬、雞湯、山胡椒等。它的用料是很講究的,首先,南粉絲須是農家自己加工的,摻不得半點假,其成色應呈褐黃色稍透明、粗細均勻,無雜質,食用時用溫水泡軟。油要用鄉村土豬肉煉成的豬油,黃花須是當年曬制的新貨,干筍只能用尖部,否則口感不好,黃花發制時也須用溫水浸泡,時蔬如蘿卜絲要切得均勻,再準備點雞湯。
